Tonight I made a dinner that I am particularly proud of because it was different and it was DELICIOUS!!!
I sauteed garlic and onion and then browned ground Lamb. Lamb is more expensive than ground turkey or chicken, but it's a great flavor alternative if you ever feel like splurging. I added spices like dill and basil to it. I removed it and drained some of the fat...but not all. ;)
I then chopped up some baby bok choy and sauteed it for a bit and added it to the quinoa I cooked.
I put the ground lamb over the quinoa and topped with a little bit of organic mozzarella.
For my superfood side, I cooked acorn squash.
When I cut it in half and scooped out the middle, I had the genius idea of putting the lamb and quinoa mixture in the middle.
mmmmmmmmmmmmmmmmmmm!!!!
The flavor combinations were unbelievable and I think this may be one of those meals that I don't just love, but that I crave. It was amazing!!!

To cook an acorn squash, just poke some holes in it and stick in the microwave for about 8 mins. Easy as pie!
