I'm About to Transform Your Taco Salad Using a Powerful Superfood Everyone MUST have in their Fridge!

If you are like me and every other American Family, you make Taco Salads frequently. You can make mass quantities and the whole family loves it. 

I am going to start with the best part of this salad because it is something that can be made separate and eaten alone or with chips. It is delicious, it is healthy, it is FILLING, and we eat it regularly. 

Corn and Black Bean Salad with Cilantro and Apple Cider Vinegar. 

Before I tell you how to make this we need to talk about this.....

Ok...I don't really like to do this, but for those of you who are trying to resist binging on food...open your fridge and take a shot of this. Works like a charm.

Alright here's the rest of the recipe

Take one can of black beans and one can of corn (organic corn is a MUST)
Open them pour them in a colander and rinse them




Chop up Fresh cilantro add it along with about 1/4 c RAW ACV add sea salt to taste and 
TADA! 
You can also mix in some Pico De Gallo for extra pizazz

This truly is a party in your mouth!!!

I stole this picture because mine was kind of ugly. I prefer blue corn chips though because they have more nutritional benefits


Anyway....onto the taco salad

What you WERE using and what to use instead. 

SO you've got the corn and bean salsa which literally takes all of 5 mins max to make and you've got the blue corn chips

Here's what else you need

1. Ground turkey

and brown it the same way. Use onions garlic and olive oil if you wish. If you use a 
2. taco seasoning...get one without msg.

Use Spinach

4. Cheese
Use this for non dairy

Or this for dairy

You get the idea! Same goes for sour cream, guacamole, and whatever else you like to use. 


My turkey was frozen tonight so I went meatless and used refried black beans instead because I was hungry and impatient. 



Here's what it looked like except imagine a side of brown rice and refried beans.

Here's how I fed it to my kids except imagine refried beans and rice in that empty spot. 


Now, let's see if the kids like it....


They do! They do!!!

Yay for healthy kids.

  1. So funny --I think we cook very similarly. I made tacos on Sunday with spinach (I thought, who does this?!). I used black beans, but I like you corn and black bean salad--will have to try that. Also, I don't bother with the non-dairy cheese. Instead I use avocado. Sometimes I chop it up and mix with lime juice, but more often I throw it in the food processor with lime juice and enough mayo to make it smooth. It tastes great and kind of takes the place of cheese and sour cream.
