Oh My Goodness, I am SO excited about this breakfast for SO many reasons.
1. It incorporates a lot of this season's superfoods into an ordinary breakfast
2. It is packed with nutrition that my body specifically needs
3. It is DELICIOUS
Before I begin...I'd like to give a big Thanks to Sarah Wisdom who shared her brilliant idea of pumpkin puree with me. You're the best!
Here are the ingredients
1. 1/2 C. Rolled Oats. Cook em according to directions 150 cals
2. 2 TBS Pumpkin Puree. Put them straight from the can into your cooked oatmeal and stir. 25 cals
3. 1 TBS Ground Flaxseeds. 30 cals
4. 1 TBS Rice Bran 30 Cals
5. 1 TSP Earth Balance Butter 25 cals
6. Small handful of Walnut, Cranberry, Orange Blend as an optional topping. 80 cals
7. Pink Himalayan Sea Salt. This makes everything taste delicious and it's good for you. It nourishes your adrenals. use in moderation
8. Flavor with allspice and/or cinnamon and/or nutmeg
340 Calories. I think I calculated correctly.
I had this with a 4 oz of my Black Currant Juice.
Here it the exciting Part!!!!
I plugged this into the app on my phone that calculates nutrient values and that breakfast provided close to 200% of my daily value for Vit A! I got twice my need in one meal!
And 38% of my iron!!!!
It's hard to get 38% of your daily iron in an entire days worth of food consumption.
I am anemic, so this is thrilling for me. I've tried taking iron pills and if you don't know what an iron pill will do to you. Google it. I will never take iron again. I'm always trying to get it from my food.
1 serving of the pumpkin provides 10% of my daily value. That's AMAZING!!!!!!!
